Serves 8 to 10
3 Cups Well Chilled heavy cream
1/3 Cup Sugar
2 Tsp Vanilla
6 Tart Apples peeled and chopped
1 Cup drained canned unsweetened pineapple chunks, chopped
16 Large marshmallows - halved
1 cup blanched whole almonds - toast and chopped fine.
In chilled bowl beat the cream until it holds soft peaks, beat in the sugar and the vanilla, and beat the cream until it hods stiff peaks. Fold in the apples, the pineapple, the marshmallows, and half the almonds, mound the salad in a large glass serving bowl, and garnish it with the remaining almonds.
